Fudgey Black Bean Brownies (Shocked!!)

Black bean brownies are so good! Take it from the person who won’t eat a bean if it’s all that’s there. Even if I’m starving with no sign of my next meal. Not baked or refried, of the pinto, lima or any other variety, on Moe’s burritos or chipotle chicken bowls. No beans for me! That’s probably why it took me so long to try this kind of recipe, but I’m here to tell you to try it! It’s crazy, there’s no bean flavor! I even secretly taste tested them on people to see if I was just losing my taste buds! I wasn’t:)

They’re fudgey, chocolatey and awesome.. Not bean like and gross! Yay! So here’s what you’ll need for these black bean brownies:

What You’ll Need For Fudgey Black Bean Brownies

1/8 Cup coconut flour
1 Cup Black beans
1/2 Cup Cocoa/Cacoa
3/4 Cup Sugar( I was so scared of the beans I used regular sugar, If you change to honey or another liquid cut to 1 egg)
1/2 Cup Applesauce
2 eggs
1/4 Cup Dark chocolate chips
3 Tbsp Coconut oil
1 Tsp Vanilla
1/2 Tsp Baking powder

How to Make Fudgey Black Bean Brownies

-Before making these you have to make black bean paste. Drain and rinse your beans well and put them and your coconut oil into a blender/food processor until its a well blended paste!

-Mix all dry ingredients(coconut flour, sugar, cocoa/cacoa & baking powder) together in a bowl and stir them up so that they are evenly distributed when you pour them in.

-Add the other wet ingredients to the black bean paste(applesauce, eggs & vanilla) and blend well.

-Add all dry ingredients and continue to blend until the batter is well mixed together.

-Pour into your pan and bake for 30-35 minutes checking to see they’re done with a toothpick before taking them out! And there you have it! Easy, tasty and protein filled brownies 🙂

I tried these first with beans I had to boil and soak myself and didn’t have a lot of luck with that..maybe it’s my inexperience with cooking beans in general? Anyone have any tips?
